Have you ever touched cotton as it was floating in the air? This coffee felt like that, soft, fluttery and elusive. I found myself giving each sip grace, wanted to hold on to the future memories of the current moment. The texture of this ‘coffee+milk’ gave way to notes of hazelnut and baked persimmons. The milk inclusion felt natural, as if it slid in on my palate like a carpet on a ride – the genie being the roaster.
