I've come a long way from not liking espresso when I've come a long way from not liking espresso when I had my first demitasse in Italy years ago; I didn't understand it at all.

now, I like it neat, with discernible flavor, balanced and with a side of seltzer - it's proper that way.

this gave sweet plum up front and orange candy slices in the middle. once I chased it with the effervescence of seltzer water, and it's memory lingering with me, my hope was that, if only espresso could have a better narrative than what's often heard - bitter and acidic in America.

we're getting there!
